Kakure

by URBAN JOURNEY
For those who have a desire to learn more about all the subtle nuances of sake, Kakure is your spot. Tucked away on the second floor of a black and white bungalow atop Japanese restaurant Ki-Sho, this intimate drinking den offers one of the biggest sake lists in Singapore with rare handcrafted sakes that are carefully curated by Chef Kazuhiro Hamamoto and sake sommeliers John and Makoto. Let the experts walk you through a tasting session, or go for the omakase set menu where delicate Japanese bar bites are paired with exquisite sips.

Why you should come here:

Kakure has a real hidden gem sort of vibe as it’s small, out-of-the-way and offers a convivial and cozy atmosphere. Think dim lighting, a long honey-coloured wooden bar where you can chat up the sake sommeliers, and intimate tables where you can spend hours sipping and snacking. Each bottle of sake is handpicked by the team here and only brought in once in limited quantities, so you really feel like you’re getting a bespoke experience each time you visit.

What we love:

John and Makoto really know their stuff, so their suggestions are always spot on. They can tell you whether a particular sake will be sweet, sharp, citrusy, crisp or smooth, and they can even pick out the perfect vessel for you to sample your sake from so you get the full range of flavours from each pour. We definitely suggest going for the omakase set menu with sake pairings to get the full Japanese experience.

UJ Tidbit:

If you’re planning on coming with a group of friends, try booking into the private room. From here you can make a night out of it with bottles of sake and shared plates of delish dishes like the crispy charcoal-grilled black throat sea perch, tangy yuzu daikon, and buttery Buta Kakuni braised pork belly.

Damage:

Bottles of sake start at $78, and the omakase menu is a great deal with six to nine courses starting at $88++.
