Although Colony only opened recently in the Ritz-Carlton, Millenia Singapore, they already have a few awards under their belt for their phenomenal food covering both the East and the West, and their elegant decor with throwbacks to the colonial days like rattan-backed chairs and houndstooth patterns. However, they are best known for their lavish buffets with seven live cooking stations serving up everything from freshly shucked oysters to hand-pulled noodles and suckling pig.
Why you should come here:
This is probably the most decadent brunch in Singapore, as the options seem almost endless. The seven live stations include the Ice Bar with fresh seafood, sushi, cold cuts and cheeses, the Grill & Rotisserie with succulent grilled meats, the Steam Basket with fresh Asian soups, noodles and dim sum, the Wok for stir fries, the Tandoor for Indian breads and curries, the Fruit Stall for fresh juices and healthy fruits, and the Patisserie for chocolates, mousses, cakes and more. This is the ultimate splurge if you really want to indulge.
What we love:
The offerings are of the utmost quality like fresh sashimi made with buttery slabs of toro, impressive roasts, various types of oysters from around the world, and even a foie gras station. Carnivores will definitely want to try their out-of-this-world rack of lamb. Besides the decadent food, we like that the setting is pretty relaxed with lots of natural light and room to move around.
You definitely want to be hungry for this one. Whatever you do, don’t eat a heavy meal the night before.
