Sustainable Dining at its Finest

by URBAN JOURNEY

Conscious eating has been making real headway here in Singapore with more people seeking outclean cuisinethat’s good for the body and the environment. So it’s not surpising that we’re now seeing a slew of restaurants opting to use ingredients that are locally grown, organic, and sustainably sourced. We’re all for the guilt-free eats, and in typical UJ fashion we’ve been hitting the pavement to seek out the best sustainable dining spots on the island. Our search uncovered tons of great clean eating places, but we’ve narrowed it down to just three that go above and beyond when it comes creative sustainable cuisine, great vibes, and stellar service.

Mezza9 at Grand Hyatt Singapore

Mezza9 has always been a favourite of ours, so when we heard they put out a new menu that focuses on conscious cuisine, we just had to check it out. The refreshed menu features tasty salads, seafood, and grilled meats, each thoughtfully marked with symbols that indicate whether it’s vegetarian, plant-based, or made with certified sustainable and responsibly farmed seafood. Some of our faves include the clam and lobster bake with smoked sausage and sweet corn, the grass-fed Australian lamb chop, and the super stacked seafood platter. Add to that a classy, yet comfortable ambiance and you have a great spot for abusiness lunch, date night out, or a place toimpress an out-of-towner.

CÉ LA VI

It was just over a year ago that executive chef Joseph Sergentakis put out his first menu at CÉ LA VI to much fanfare, but never one to rest on his laurels, he recently unveiled a new culinary programme that focuses on sustainable produce prepared with artisan flair. For this menu he drew inspiration from regional flavours to put together offerings like fresh sushi and sashimi, starters like the seared king salmon tataki with smoked ikura and tangy jalapeno dressing, and mains like the slow roasted black cod with mashed potatoes, charred lentils, and Chiang Mai sausage. Pair your meal with a bottle of vino recommended by Mathias Camilleri, the first Master Sommelier in Singapore.
